  1. Origin:

    • Tequila: Produced mainly in the state of Jalisco and limited regions in Guanajuato, Michoacán, Nayarit, and Tamaulipas.
    • Mezcal: Can be produced in nine different states in Mexico, including Oaxaca, which is the most well-known region for mezcal production.
  2. Agave Type:

    • Tequila: Made exclusively from blue agave (Agave tequilana).
    • Mezcal: Can be made from over 30 types of agave, including Espadín, Tobalá, and Tobaziche.
  3. Production Process:

    • Tequila: The agave hearts (piñas) are typically steamed in industrial ovens before being distilled twice in copper pots or stainless steel columns.
    • Mezcal: The piñas are usually cooked inside earthen pits that are lined with lava rocks and filled with wood and charcoal, giving mezcal its distinctive smoky flavor. It's then distilled in clay or copper pots.
  4. Flavor Profile:

    • Tequila: Typically has a smoother and sweeter taste, with a focus on the pure flavors of the agave.
    • Mezcal: Known for its smoky flavor, which varies depending on the type of agave used, the distillation process, and the region of production.
  5. Regulations:

    • Tequila: Must adhere to strict regulations set by the Tequila Regulatory Council (CRT) and is only considered authentic if it contains at least 51% blue agave.
    • Mezcal: Governed by the Mezcal Regulatory Council (CRM), it must contain at least 80% agave, but most mezcals are 100% agave.
